Recipe : Spinach & Sausage Stuffed Mushroom

What do you do when you go to your local grocery store and can't find what you specifically came there for? In this instance, I was looking for my favorite sausage stuffed mushrooms. You can find these in every grocery store, normally around the butcher/meat section. Yes, I'm sure I can make it on my own but normally it's a lot less hassle to just buy it pre made and pre stuffed!

So I must say I was a little irritated when I went to Safeway and couldn't find them. I was very intent on grilling that day and was even considering driving all the way to Raley's at this point. Instead, I decided to grab the butcher. I was polite and seemed very eager to find them and he was apparently in a great mood to help me. 



1 lb Mild Italian Sausage Rolls
12 medium size Portabello Mushrooms or (4 large ones)
8 oz Mezzetta Roasted Bell Peppers (diced)
2 oz Fresh Express Baby Spinach (chopped fine)
Mushroom Stems (chopped)
Salt & Pepper to taste

Nothing is wasted with this recipe. Once you're done dicing and chopping, mix all the ingredients in a bowl. You can keep it refrigerated or scoop into the mushroom as soon as you're ready to grill. You can even add a sprinkle of mozzarella cheese if you want a little of crunchiness on top.

You'll find that the result is exactly what you get in the grocery store. It is cheaper and there are no underlying concern on not knowing what's in your food!
